  Description

Pacific hake is the most abundant of the hakes in the United States. They grow to about 60 cm (2 ft) in length and weigh 1 -2 kg (2-4 lbs). If not stored properly after being caught the fish is prone to parasitic infection that originates in the fish's stomach that then migrates to the muscle tissue giving the meat a gel-like texture and causing the meat to disintegrate when cooked.

Supplies are fully utilized, however harvests should remain relatively stable (considering natural fluctuations in the population).
